Zucchini, Anyone?!!

Lately with the abundance of zucchini coming from our garden (we have three plants!) it has been making an appearance at about every meal and almost in everything.  Just ask the kids!!  They are getting more and more curious at meal times about where I am hiding the zucchini if they don't see it!!

Yep, it has been a week of zucchini everything and if you ask my hubby, he says that I have the longest list of ways to cook zucchini!  Treva made zucchini bread early in the week.  We had stir fry one night with zucchini and eggplant from the garden!  I shredded zucchini in our green salad one night with sun dried tomatoes and served it with homemade balsamic vinegar dressing.  YUM! 

Here are a few more zucchini dishes we had.

Spaghetti sauce (it's actually a bay leaf, not zucchini you see in the bottom right hand corner of the picture).

Scrambled eggs with sausage, red onion, fresh garlic, garden fresh tomatoes and yellow and green grated zucchini. 


Quesadillas with cheese, sausage, and grated yellow zucchini for lunch!

In Oklahoma the yellow squash is called yellow garden squash. The green is the zucchini. I've enjoyed following your blog and am anxious for you to get the kiddos home from Ethopia. Janie
