Friday Night Pizza

Friday nights just seem like the night to have pizza, or another famous Friday night meal we have at our house is waffles - aka - breakfast for dinner!  Since we don't live close to any restauraunts for take out, we have to create our own (it's cheaper too).  Our local Walmart is being remodeled into a Super Walmart (YEAHH!) and now they are carrying more grocery items such as P.F. Chang's frozen line.  It definitely is not near as tasty, but we have tried a couple of their frozen meals for a quick Friday night take out meal!!  

Joann K. (from www.thepagesofourlife.blogspot.com)  sent me a recipe after reading my post about zucchini and since I couldn't wait to try it out, that's what we had tonight!!  It is called Three-Cheese Garden Pizza.  It calls for the refrigerated pizza crust but since I rarely even buy those, I made my own crust.  Then, it calls for veg. oil (I used olive oil) with 2 minced garlic cloves (I used at least 4!) mixed together and spread on the crust.  I also pre-baked the crust  on a stone at very high temp. for maybe 5 minutes because it seems to not get quite as mushy that way!  (I guess this recipe did say to pre-bake it, Joann!) 

Then, you mix the three fresh grated cheeses (mozarella, parmesan, and cheddar, but I used swiss instead of cheddar) with italian seasoning and mix half of it on the crust out of the oven.  Next, you put your toppings on (sliced onion - I used red onion, chopped zuchinni, tomatoes, and mushrooms, which I did not have.)  I also added a bit more olive oil and crushed fresh garlic on the top.  Lastly, you add the remaning three cheese mixture.  

This turned out super good!  I did also add chicken to the toppings (I often buy a whole cooked chicken from Costco and take the meat off and freeze it for quick convenience.)  I think when I make this pizza again, though, I would add a bit of salt to the toppings personally.  We also really like the garlic, so I would use even more of that!!  I would also like to try making my own sourdough pizza crust with my starter, which I have not tried yet.

 We had to have two pizzas for our family, so Katreese prepared a pepporini pizza to her liking! 

      The zucchini was cooked just right.  It wasn't mushy yet!  Joann, I will definitely add this to my zucchini recipes!
